The combination of our hillside terrain and sustainable
viticultural practices give our Cabernet Sauvignon
a very unique flavor. Our grapes are Estate grown
exclusively from GABRIELLE'S VINEYARD.
Our Cabernet Sauvignon is a fantastic wine for
a wide variety of occasions. Deep ruby red in colour
with violet reflexions, intense. Both its aroma
and taste are reminiscent of ripe blackcurrants
with, often, a hint of chocolate, cedar or mint,
full and vibrant on the palate with soft tannins
and a big finish capable of long aging. Great with
red meats and spicy food.
Cabernet Sauvignon as a variety in general forms
the backbone of the top red wines of Bordeaux, where
it is usually blended with Merlot and Cabernet Franc,
among others. Cabernet travels well, great examples
are found throughout the world, most notable in
California, Chile and Argentina.

It is our most complex and precise wine.
The exceptional quality of grapes, the age of
vineyard (more than 40 years) and a vinification
with a submerged hat for 15 days made a very
suave, rich, and long in the mouth wine.
This "cuvee" needs to be open and
decanted 1 hour before service.
The style of our wines produced at our bodega
Parsifal SRL is more tuned to structured fruity
wines. We believe very much in the quality of
our grapes and our work to stay true to the
essence of the varietals qualities.

Syrah is spicy, fruity, sometimes smoky
and meaty, and shows plenty of tannin. Slow
to age, at maturity the wine can display
incredible layers of flavor and complexity,
a smooth, silky texture and wonderfully
spicy aromas that sometimes include violets
and rose petals. The flavors revolve around
blackberries and black plums, freshly cracked
black pepper and an almost indescribable
"animal" element that can resemble
saddle leather and raw red meat.

Other Information:
It shows a dense color with some brick
hues creeping into the black red. The
aromas are earthy and cedary and the taste
soft and mellow with savory of richness
and liquorice. Meaty tannins, with just
a little bit of grip on the finish, provided
plenty of structure. The food to accompany
it is fillet mignon cooked with bacon
and mushroom or simply a cheddar style
cheese. The cheese cuts through the tannins
and makes the wine seem creamier.
